Mmmmmmm! Plum Pudding!
Thanks to an enormous glut of plums I made this fantastic plum pudding, inspired by the wonderful Anna from Energy Works. Not the prettiest dessert I’ve every made, but it tastes great.
Ingredients:
For the Plum Compote
500g Plums (source of fibre, antioxidants, vit C, Iron, potassium and B-vitamins)
50ml Water
75g Sugar
1 Handful Chia Seeds (source of antioxidants, fibre, protein, Omega 3, calcium, phosphorous, magnesium)
1 Handful Flax Seeds (Omega 3, vit B1, copper, manganese, fibre, magnesium, phosphorous, selenium)

Bananas (vit B12, manganese, Vit C, fibre, potassium, biotin, copper)
Coconut Oil
Coconut Milk
Instructions:
First make the compote – stone plums and simmer with water until they begin to break down. Add sugar and continue to cook over a medium heat for approx 15mins. Add seeds and mix.
Meanwhile, chop bananas and fry lightly in coconut oil.
Serve together with a small drizzle of coconut milk.
